Grapefruit is the one citrus that brings bitterness as well as acid, which is why the salt rim matters here more than it does on a margarita. Salt suppresses bitter perception — rim the glass and the grapefruit reads as juicy rather than sharp. Skip it and you get a noticeably more austere drink. Both are good; they are not the same.

How to make it

  1. Salt the rim of a collins glass if you want it, and fill with ice.
  2. Add the spirit, lime juice, simple syrup and grapefruit juice to a shaker with ice.
  3. Shake vigorously to chill.
  4. Fine strain into the glass and garnish with a grapefruit slice and rosemary.
